cleaning a butchers block.

can someone help, i bought a butchers block today. it has got somesort of shiny finish on it, i dont think its varnish. it needs a very good clean. it hasnt got blood and guts mess on it. just very grubby.

I watched my butcher cleaning his, he was scraping it with a sharp knife.0

My local bucher scrubs his with hot soapy water and a stiff brush then rubbed sawdust into it when I watched him doing it last week:hello:0

The proper way is to clean it is with a block brush
Then clean it off with some soda crystals in water.
Put fresh dry sawdust on it to dry it out and keep it from smelling.
If it's shiny someone had varnished it perhaps?
