need a foolproof recipe for an 11in sponge cake..

hello all, i have never cooked a big cake like this before and i;ve lost my nerve.. i have looked online and there are so many variations. i only have a little time and i dont want to waste ingredients, so i want it to work first time. i have one 11in tin so i need to make the mixture in two halves as i dont trust my oven to cook a double height cake all the way through.

i dont know if madeira sponge might be better. i am going to ice it with fondant icing..what do you think?

does anyone have a tried and trusted recipe (with gas mark and time) for a cake this size??
