Help me to not throw out this stuff!

We have eaten at friends' over the weekend and when I have just done my fridge inventory I found the following items which are now all at least three days past the use by date:

375g tub of cottage cheese
Mullerlight vanilla yoghurt and toffee yoghurt
half a pot of reduced fat creme fraiche
two eggs
quarter bag of ready grated cheese
200g tub of extra light philadelphia



Normally I would just chuck it because it's not actually that much stuff, but I am trying really hard not to waste anything and thought I might try and concoct something out of it but I can't think what! I have normal storecupboard stuff like flour, sugar, dried fruit and so on. Any ideas or recipes? Thanks - hope you are all having a lovely Bank Holiday!

    The first thing that springs to mind is a quiche and a cheese cake.

    Grated cheese, cream cheese and eggs. (add onion, bacon or tomato)

    Cottage cheese, creme fraiche for the cheese cake.

    Or just plain cheese on toast while you are thinking about it. :drool:

    Carrot cake with the cream cheese topping.


    :think: I wonder if you could use the muller rice to flavour a cheesecake? :confused:

    I would use the youghurts to make a yoghurt cake and the cottage cheese / philly to make a no pastry quiche. the quiche could then be topped with the grated cheese or the cheese could be frozen.

    If you have potatoes and a few storecupboard bits (garlic, stock cube?) I'd make dauphinois potatoes with the grated cheese and creme fraiche, probably add the cottage cheese too. If you don't want to eat it today, you could make it up and freeze.

    I'd just eat the yoghurts or they could be mixed with fruit to make a quickie desert. They freeze well too if you don't want to use them now.

    The eggs could be mixed with the philadelphia to make a 'sort of' pasta carbonara. The grated cheese would be good on top of homemade pizza. The creme fraiche could be used to make a sauce and it freezes well too.

    This thread has lots of ideas for using up food:

    Leftovers? Use it up! Don't throw it in the bin!

    I'll add your thread to that one later to keep the ideas together.

    You can normally use eggs ages after the use-by date, my mum always used to anyway, kust make sure they're cooked properly, she always used to use them in cakes so they got really hot. But I second the carrot cake with cream cheese topping... Yummy!

    The yogurts freeze well like ice-cream and low fat too.
    To repeat what others have said, requires education, to challenge it,

    u could use philly as topping for a cheese cake

    philly will make a decent cheesecake

    Can you use the yogurts for puddings in your next meal.

    The cottage cheese could be used to make a vegetable lasagne or vege pasta bake - just add pasta, veges and some kind of tomato sauce - layer up and bake with some of the grated cheese on top.

    That leaves the creme fraiche - i would do a kind of carbonara with bacon and mushrooms if you have them - serve with pasta.

    The lasagne can be frozen straight after baking - as can the pasta sauce if you dont plan on eating it straight away

    That should use up everything

    To check whether Eggs are still fresh after the date. Put them in a pint of cold water, if they float then they are off. If they sink they are fine to eat
