Fresh filled pasta

I got some fresh filled pasta on offer the other week for a quick and easy dinner.
It now needs to be used, I was just wondering what sauces you all use or did you just drizzle with olive oil?
It is Cappelletti Prosciutti Crudo & Cheese if that helps with your suggestions.

I sometimes just add some pesto (from a jar or you could make your own) to the fresh filled pasta which makes a very quick and easy dinner. Or you could make a simple sauce with onion, garlic and a tin of tomatoes. Add some white or red wine vinegar (if you have it), a pinch of sugar and some herbs and cook slowly for about 20 mins.0

We freeze ours in a big sealed bag and just take out a handful for lunch and it freezes quite well. Started doing this as our toddler loves pasta and we wanted to her have some that was a bit more substantial so went for the filled pasta.Not that it helps with the sauce thing though!:o0

I would love to make my own pasta bu have never given it a go
I just buy whatever is on special in the supermarket. I do not buy it often enough to be able to tell you what the best brand is. I am sure other os people will know?
The only thing about the one yesterday was that it claimed to be two servings. It did us last night as we had a late lunch. A normal day back in after work and I would have been starving mid evening, so would need to bulk it out with some salad and garlic bread.
I normally make a tomato based sauce and was looking for a wee change. Luckily I had an opened jar of pesto it was nice!:grouphug:0 -
Did fresh filled pasta for the kids' tea last night. I often do them a quick cheesy sauce which is just some cream or Elmlea heated gently with grated cheddar. I sometimes add some ham if there's some in the fridge that needs using up, and / or some peas. I also sometimes shake in a little garlic oil to give it an edge. Nigella does one which is half a chicken stock cube fried in a little butter and garlic oil then add some cream when it's melted - this is lovely but can need diluting with a little water from cooking the pasta if it's too salty.0

I often just melt a little butter over it, add some torn basil leaves, grind a little black pepper and add a sprinkling of parmesan. Particularly if it is a tasty filling like the one you mention as so many sauces drown out the flavour.
The other nice thing to do is heat some olive oil then fry some chopped red chilli and garlic in it for a minute. Add half a glass of white wine and simmer a little. Toss the pasta in it and add parmesan.Yeah, whatever. I'm a grown up, I can take it...0
