Grated Carrot

Hi

I have been trying to be very OS and have been bulking up meals etc. I have used my food processor and grated 2kg of carrots :rolleyes: and have read of others freezing them. What I want to know is how would I do it? Would I just portion some into freezer bags? When it comes to using the grated carrots would I need to defrost them first?

    When you freeze grated carrot it will all stick together in one large lump because of the moisture in it and I don't think it will freeze very satisfactorily unless you open freeze it first loosely spread out on a tray in the freezer and then bag it up when it is frozen (after about 30 minutes). Normally carrots are frozen in chunks and I suspect grated carrot is probably hardly worth freezing. However, I cook sliced peppers from frozen (I open-freeze them first) and first they cook quite satisfactorily from frozen. You just need to add a couple of extra minutes cooking time.

    I do freeze grated carrot for bulking up, just put a portion in a freezer bag, you can defrost but I dont if its for a stew or casserole just throw it in when its hot and it
    defrosts almost immediately.

    I regularly freeze grated carrot to use with minced beef or Quorn.
    As it defrosts it can add a little more liquid to the mixture, so something to be aware of if you need a dry consistency.
    I can cook and sew, make flowers grow.

    Definately open freeze as primrose suggests...last time I decided to cut corners with mushrooms I ended up with them all stuck together

    do mushrooms freeze well? I've never bought sufficient quantities to have to freeze any!

    I always thought they went very watery after being defrosted :confused:

    You can't eat them raw after being frozen! (yuck!) but I've frozen mushrooms very successfully when I've found them drastically reduced at the supermarket and bought loads! They're fine in cooking.

    I couldn't eat raw mushrooms so I'm ok on that front ;) but now I know they are ok after freezing I'll buy more when they are redced, thank you!!
