i want to make icecream and ice lollies, does anyone have any recipes and methods?

if possible without using a machine.i know if you have a basic vanilla you can addmost things to it.

i know it is possible to make alcohol lollies (cherry brandy, cider, and wonder how that is done)

also does anyone know how to make wafers? (like they serve with icecream in restaurants, i think they make them on the premises)

does anyone remember the onld midnight mint chocices? i would like to make something similar but i dont know that it can be done at home.
