Banana cake....

Hi all,
Got some very ripe bananas this morning (very cheap!) and want to make a banana cake,however can I make individual ones as I have lots of paper cases and it will be easier for the kids to help themselves,rather than me having to cut it up. Will it be okay to make them this way and just not cook them for so long?
Its my day off and i've never made them before but am in a baking mood!:j

I use a nana cake recipe that's meant to go in a loaf tin (sometimes I add raisins or choc chips) and then just bung in cupcakes.
Just cook them for the time you would cupcakes - rather than the time for the whole big loaf cakeworking on clearing the clutterDo I want the stuff or the space?0 -
Yes, i have made them like this before, much easier for my dd to take to school, i did them in muffin cases, very tasty x0

Yes it will work if you reduce the cooking time to 20 - 25 minutes. I prefer to make a loaf shaped banana bread/cake because my lot like it buttered. An alternative would be banana muffins:
7 oz plain flour
5 oz caster sugar
1 teasp bicarb
1/2 teasp baking powder
1/4 teasp salt
3 - 4 bananas
1 egg
2 1/2 oz melted butter or sunflower oil
Mix together the dry ingredients in a bowl. In a separate bowl mix the egg, banana, butter/oil. Fold the wet ingredients into the dry bowl. Spoon the mix into paper cases and cook in the oven at 180 degrees for 20 -25 minutes.

AARRRGGGGGHHH!! Just gone to use my scales and my youngest (7) has broken them and obviously not told me....(he has learning problems and is ALWAYS fiddling around with my things).. How can I measure out my ingredients now? :rolleyes:0

Pink-winged....can you tell me how many muffins your recipe will make please? Baking is not my strong point and I never know how much mixture to put in each paper case!!

Hi house of boys,
I love banana cake too, defo best with the ripest black bananas
I either make a loaf or muffins, normally the mix i do will make 6 muffins or upto 12 small fairy cake size.
My recipe for you to try:
5oz self raising flour
1/4 tsp bicarbinate of soda
1 or 2 ripe bananas
2oz soft butter
1 egg
5oz caster sugar
1/2 tsp vanilla extract/essence
pinch salt
place egg, banana, sugar, butter and vanilla in mixing bowl and blend with hand mixer until all smooth.
add flour and bicarb. mix to combine
place in greased + lined tin or cases and bake for 40 mins for loaf, 15-20 mins for little ones Gas mark 5 /190c /170 fan
Enjoy it best with a cuppa!
