Chicken Soup Recipe Suggestions Please

Really proud that I managed to cook a roast chicken dinner today.

Have lots of left over chicken though.

Anyone got a good chicken soup receipe that a non-cook like me can make?

Boil the carcass with seasoning and onion for about 1 or 2 hours then drain and put the stock aside. After having soaked bean mix and soup mix (lentil) for the requisite period, cook them as per packet instructions, THEN add to stock (should not burn at bottom of pan this way). Add salt, pepper, minced onion, garlic and mixed herbs to taste. Also add no-soak pearl barley if wanted, after having cooked them separately. Make up dumplings, with herbs added if wanted, add any leftover chicken and the dumplings to the pot and simmer for 20 mins. Enjoy!:j
