Cannelloni or Lasagne?

This is probably in the wrong place - if so, sorry!
I want to make spinach cannelloni tonight. I've got dry cannelloni tubes, why do the recipes all seem to suggest using lasagne sheets? I've tried this before and it's really messy. Is it surely not easier to spoon the mix into dry cannelloni tubes?
Also, I was going to substitute ricotta for Quark? I hope this will work!
