I would really like to make my own low calorie/fat coleslaw. Has anyone a good well tried recipe?

I bet the coleslaw from the Gourmet Burger Kitchen is low calorie. It does not have any mayo in it. I wonder if anybody has managed to simulate it?0

Finely shred ( I just use a sharp knife )some cabbage, shred or coarsely grate some carrot, ditto onion if you like it - go easy on this if using bog standard brown onions as is strong flavour, can substitute with spring onions or chives. Dump it in a bowl, add dressing :
Dressing - either use whatever low fat mayo you already use straight or mix with something like 0% or 2% fat Greek Yoghurt, Quark, low fat creme fraiche - to taste. Kick it up a bit - mix in a little mustard and/or lemon juice. Then add salt and pepper to taste.
You can also use a vinaigrette dressing ( non mayo slaw is very popular in the US, especially as an adjunct to BBQ )but alter the classic ratio of three parts oil : 1 part wine/cider/fruit vinegar or lemon juice, to half and half instead. Add a little mustard and sugar or honey to take the edge off.
I usually use white cabbage for " creamy " type slaw and red for the vinaigrette type - no particular reason apart from the look of it
also think about adding other stuff once you start experimenting - apples and raisins are classic, but I have made wartime style slaw salads using shredded raw swede & turnip etc and they were really quite palatable ! yes let us know how you got on. I've never made it myself Largely for the reason of I'm scared of it being so nice and having to eat it all :rotfl:A little nonsense now and then is relished by the wisest men
