Trouble is, its not just onions, anything I want to simmer slowly ends up boiling just a little too fast, when I want to reduce a sauce down I get big fat splurty bubbles iykwim instead of gentle heat! I'll drag myself to the shops at some point and get a diffuser.
Thanks for all the advice and good to know I'm not the only one!
I do all my simmering in the oven - no choice, with an AGA
I do understand though, when you're used to simmering on the hob. I did this until I was 43 years of age and have only had to change "recently"
It can be done, thoughWarning ..... I'm a peri-menopausal axe-wielding maniac0 -
I love this forum! After posting this message HelenKA pm'd me to offer me her own unwanted diffuser which arrived in the post this morning. Not only was she kind enough to bother to contact me about it but she didn't want anything for it!:A I just want to say thank you to her and to everyone else on here who helps me in all sorts of different ways. This is such a supportive online community and I've very grateful and proud to be part of it!:o0

Thanks to all....I had thought that it was just me had a problem with my new gas hob, no way of lowering the flame sufficiently...will look for a diffuser
Marie
And while you are buying diffusers, I suggest you get at least 2. That way you can fine-tune even more, by putting one diffuser on top of another or use them on a different hob. I have cooked on varying intensities of gas all my life and I own 3 diffusers in total...."Remember that many of the things you have now you could once only dream of" - Epicurus0
