Working ocasionally for a company from abroad...

I got a call from an old employer from Italy I use to do something like data administration for them before I came to the UK. She took a break to have children, some years passed...
She now has some ocasioanal contracts and still wants me to help her (from here, sending the data over the Internet).
How can I do this legally?
Can I be self employed? (I will have just one client, but I don't have a schedule or the same amount of work every month)
Can I be employed in another country if I am not phisically there?
It's not a very big job, but as I work part-time now this will get me an extra 200-300 euros a month which will be very good for me... but I want to do it right.
