canterbury kisses

wonder if anyone on here remembers lovely cakes called canterbury kisses??

years ago i used to buy them at a patisserie in waltham abbey (warrens was the name if my memory serves me well), but i have never been able to find a recipe for them.

they were like a large polo mint in shape, round with a hole in the middle and were made of what looked like a light batter mix, but doughnutty /spongy in the middle, they werent very deep, and they were crispy, like a batter rather than a doughnut and soft. they were split and filled with cream.

absolutely lovely and would love to have a go at making some.

can anyone help.xxxx
