Lots of beetroot & carrots to use up!?

Hi everyone,
My dad has just delivered a big box full of freshly pulled up carrots & beetroot to me. The only thing is that I now need some ideas on what to do with it all. I hate seeing things go to waste so all ideas are welcome!

I've not done any chutneys etc for a while so that might be a good idea!?

I'm hopeful that this get's me out of cooking Christmas dinner!
Baby Ruby arrived after 55 hours of labour & an emergency c section on Christmas Day at 14.41 weighing 6lb 6oz...And yes I did get out of cooking Christmas dinner!!:rotfl:

Carrots freeze really well, just blanch, dry bag and freeze.
Also carrot soup, carrot cake, beetroot chocolate cake (not made this yet myself!), add grated carrot to salads, bolognaise/chilli sauces, cottage pie etc.Don't be a sheep, be a shepard!:D:D:D:D:D:D:D:D:D:D:D:D:D

use beetroot as a veg with any meal just cook and serve warm delicious though not commonly served in uk0

Beetroot - chop it into chunks - about 2cm squares, drizzle with oil and pop in the oven at about 180C till their roasted - an hour should do it but check on them every so often and then freeze it in portions.
Beetroot is lovely souped up with a bit of parsnip & horseradish - or ginger, lemongrass and coconut milk.
Or in cake...I made beetroot chocolate cake t'other day and it was most scrummy - a lot more dense than a standard choc sponge but convince yourself its healthy - one of your five a day!! :rolleyes:
