Can anyone give me a quick hint how to thicken up some frosting I've made for carrot cake. It is butter, cream cheese, icing sugar and lemon juice but it is too liquid to be used as a filling and topping. I've not had this problem before and I need to take it to work as a leaving cake first thing in the morning. Help.....

I would chill it for a bit, it could be too warm. 15 mins in the quick freeze tray should tell you whether its a heat issue.
If not, beat in a tablespoon or so of icing sugar and repeat until it thickens. This will make it sweeter than normal though - be warned.

Add in extra icing sugar a bit at a time to thicken, if it's too sweet at a bit more cream cheese.

Thanks folks! I added more sugar, and put it in the freezer (which helped a bit) but it was still runny. I think the problem may have been using low fat cream cheese instead of full fat?
Never mind - the cake was served with a side serving of frosting and nobody seemed to complain!0
