Two quick tongue questions if I may....
1. Can I cook an unbrined tongue? The butcher said they should be brined...will there be much difference?
2. The recipe calls for an unsalted tongue....does this mean its not brined?

brined = soaked in salt water for a period, I guess if it was for a longish time it be called "salted"?. Some people used to for some reason, before cooking. Can't see why
