The Curry Secret by Kris Dhillon

Hi, Has anyone bought the Curry Secret book and made their own curries? I have just bought it and the first curry turned out just the same as a restaurant curry, but I was wondering whether you can freeze the sauce mixture after the third stage or is it only after the second stage. The onion mixture is the base of all the curries ?

    Yeah i have this boo & its great,very tasty.
    I normally freeze the base sauce & just use it as & when,making a super fast curry.

    The base sauce is the same for all the `moist' curries
    so they ..well all kind of end up tasting the same -
    tha base also takes ages to make - I know other people who have done this and also only ended up only doing it once or twice - and then use other faster methods
    1/2 the instructions are redundant - you can obviously do things faster other ways
    and tha amount of fat in the food is horrifying

    I would borrow this from a library - I wish i hadnt bought it

  • I was going to cook something else for our tea tonight, but reading this thread i now need a curry. I have one in the freezer (chicken tikka masala). I dont have time to defrost it as i usually do, can i cook it from frozen in the microwave?

    Please let the answer be Yes! My mouth is sooo looking forward to the curry.

    Someone may need to confirm this, but could you not defrost it in the microwave on the defrost setting, then stir it and blast it on full power to heat it up (stirring once or twice mid cooking)?

    Hi, Thanks for all your replies, I made the most fantastic jalfrezi and added a bit of spinach, just like the local restaurant. On Saturday I made twice the amount shown on the basic curry sauce, i.e. 2kg of onion and 4oz of garlic, ginger etc and then froze it in 500ml container which is enough for eight more decent size curries.

    I just didnt know whether to go to the third stage with the tomatoes and then freeze it, so I played safe and froze it after the second stage, just now need to do a huge chicken cooking session and freeze this.

    Best book I have bought, so going to clear out the other 1000 old books and stick with the bible of curries. Anyone know if it is worth investing in the latest book ? or much of the same ?

    I've got the older version of this book and the one that came out earlier this year. The new one is lots easier and everything that I've tried has come out out really well.

    The author does use a lot of salt and not enough garam masala and other spices so I've adjusted these slightly to suit our tastes but overall I'd say that this was a fantastic recipe book. Certainly the best curry one I've tried.

    The first Curry Secret was published well over twenty years ago and is quite outdated.
