Another vote here for Cranks Fast Food - I've made more recipes (and got more ideas for adaptations) from here than any other book I own. I also have the Cranks bible and The Gate book but they always look a bit complicated/daunting and I don't think I've made anything from them (yet!)
I'd also recommend 101cookbooks on the web - Heidi started the site to try and force herself to make things from her numerous recipe books rather than buying new ones. I've picked up lots of great recipes here, plus her photography is beautiful and there's a good community of readers providing suggestions and alternatives to recipes.
She focuses on natural foods and tofu crops up fairly often. I've been veggie for 15 years but hadn't cooked with tofu before and her site has really opened up my eyes to how to make it tasty, plus lots of other untrieds like quinoa and almond butter.
Heidi also created a cool recipe search engine (all veggie or vegan) at supernaturalrecipes dot com. Great when you've got something in the fridge that needs eating but inspiration is lacking. It doesn't just search her site but other personally chosen sites and recipes.
The Waitrose search engine (advanced) is good too because you can specifiy vegetarian recipes only and the Guardian site has an interesting series called "The New Vegetarian"
I also have a couple of Linda McCartney book (mushroom risotto is good in the red and yellow book)
I also tear out recipes from mags (mostly unsorted tho!) and keep all my recipes electronically in a database so I can search and categorise them.
We try and have one night a week as 'recipe night' where we make something we haven't made before and then vote on whether we'd eat it again or not....:D0
