Squash and Carrots

I have a whole squash and ALOT of carrots (4kg) reduced in mr A's last night.

anyone got any nice idea's on what i can make with them?? i can buy any other bits i need to go with them if i havn't got them, but im looking for something as cheap and cheerful as possible.
This months aim :- Stick to food Budget / find £100 for my car insurance
May GC :- £250/£234.55 :T:A:T
June GC :- £150/£127.37:eek:

    if you have any carrots left over - just peel and slice and freeze in single portions.. they will be much nicer than packets of frozen veg and will keep until you need them.

    chop them and freeze until needed? I use both chopped as roast veg with a joint (add chunky chopped onion/shallots, corgette, sweet potatos, parsnip and anything else I fancy!)

    This soup is yummy. Substitute the sweet potatoes for squash/carrots.
  • Halve the squash, scoop out the seeds and stuff with a precooked mix of say, rice, feta cheese, fried porcini mushrooms, sun dried tomatoes, gated carrot(!), herbs etc, wrap in foil and bake for an hour.

    Sweet n sour squash cubes.

    Par steam the carrots, roll in grated parmesan and bake for 15-20 mins.

    Moroccan tagine with couscous.
