Freezing Dandelion Fritters & experimental food

I'm going to be making dandelion fritters tonight, but I doubt I'm going to eat them all. Anyone know if it's okay to freeze them? I'm more concerned about the crunchiness of the batter being ruined than anything else. Also, is there anything I could add to the batter that would help them freeze better?
They're part of an experimental meal, i.e. it should taste good but might be a bit weird. If you're feeling adventurous, the rough guide recipes are below:
Spicy Dandelion Fritters:
for the batter -
white flour, light olive oil, a few eggs,
tumeric (lots), corriander, cumin seeds, paprika, bit of chilli powder (don't have any fresh, but that would probably be better), salt & pepper.
Cut heads off stems as close to flower as possible, wash thoroughly, remove as much of greenery as you can without it falling apart (unless you like bitter things) and dry thoroughly.
Mix dry ingredients together thoroughly.
Beat eggs into submission
Heat oil a few cm deep in a frying pan.
Dip blooms in egg mix, roll in dry mix and place gently in hot oil. Fish out with a slotted spoon, drain on a clean teatowel you don't like much et voila!
The rest of the meal is marinated lamb chops w/ peas and carrots (I have yet to think of something exciting to do with the veg) and lavender-scented rice & couscous. If you're interested, I'll let you know if it's any good!
