Cheap, easy lemon crispy bars

Just made these and thought I would share.
Makes 8
1tsp lemon rind
25g reduced fat spread/ or if not dieting you could use butter
i tbsp honey
25g chopped prunes (or you could use apricots)
50g rice krispies
Line base of a small rectangular tin with greaseproof paper.
Place lemon rind, butter and honey and prunes in a saucepan, untill melted.
Add rc, pour in to tin, and place in the freezer for 10 mins, cut in to 8 bars, enjoyx
Would be good instead of a biscuit or for the kids lunch box.
