Lentil Salad...

I'm looking at making a lentil salad to take to work for lunch....
Has anybody got any recipe suggestions...

I love those little grey lentils with feta cheese and peas (I use frozen petits pois).
Just cook the lentils till soft but still with some bite, add the peas at the last minute. Mix with crumbled feta and chives when cool. Add a vinaigrette dressing.
Other things that go well with lentils are roasted peppers, sun-dried tomatoes, crumbled bacon, crumbled blue cheese, goat cheese and red onions.0 -

Yum, lentil salad is a great idea for a packed lunch, lentis are so cheap! I will have to try some of these myself.
Definately love the feta, maybe with some black olives if you have some too (although not the cheapest!).0 -
Funnily enough was looking at a recipe for these today.
Spiced Lentil Salad.
6oz puy/green lentils,
1 chopped onion,
tsp grated ginger,
oil,1/2tsp tumeric,
1/2 tsp cumin,
1tsp garam masala
A pinch of cayenne pepper to taste.
Cook the lentils for 30 mins.Fry everything else in a little oil for a minute and add the lentils.Take off the heat and add 1tbsp of wine vinegar and 1 tbsp of lemon juice.Season and let go cold."Sometimes life sucks....but the alternative is unacceptable."0 -
Green or brown lentils cooked, then drained well. Whilst still warm add olive oil to taste plus pepper. if you have anchovies add some and their oil instead of olive oil.
When cold add any of the following, preferably just before serving. Chopped raw onion, tomatoes in chunks - if there is enough juice no need for vinagar or lemon juice, chopped fresh herbs, boiled egg in halves or quarters. Fennel would also be nice. You could take them in a separate box to keep them fresh.
Adjust seasoning and add salt, vinagar or lemon jiuce as required.If you've have not made a mistake, you've made nothing0
