    Here's a recipe from The More With Less Cookbook by Doris Janzen Longacre. I've reduced the salt and the other seasonings are open to experimentation.

    2 cups of dry breadcrumbs
    ½ -1 tsp of salt
    1 tsp celery salt
    1 tsp of onion salt
    ¼ tsp pepper (I just grind in some black pepper)
    1 tsp of chicken seasoning or season-all
    ¼ cup of vegetable oil - any you like

    Mix together with a fork and keep in an airtight container. It doesn't need refrigerating.

    To use, simply dip chicken or fish in water, put ½ cup of the coating mix in a plastic bag and shake chicken/fish in the bag. Bake on a non-stick tray.

    If you want to use up the mix you already have, then there's no reason why you can't just dilute it with extra flour :)
  • Evening all. I was wondering whether anyone had a recipe for southern fried chicken, preferably one which does not have to be deep fried? Thanks.

    I tried to do this years ago with a recipe i tired to make up. It was awful!! Maybe these links on google are helpful? I think part of the pleasure is that it is deep fried, so recreating that when oven baked might be hard. I'd love to know how you get on!

    I make crispy chicken and almond stir fry, and i usually make a simple batter and dip the chicken in then fry. But I had no eggs and had to think quick so I used gram flour (grounded chickpea flour) and added water, dipped the chicken in and fried it and it turned out fab, didnt taste of chickpeas and wasnt dry in texture just golden crispy!

    Gram flour can be found in most places, i got my bag from asda, and is very cheap. I brought it to make barjies (sp)
