Lavender cup cakes - recipe?

Hi all,
It's my friend's birthday next week, and I want to make her some cupcakes.:A
I have an idea of doing lavender and lemon ones, with plain white royal icing on top. Now, I have Nigella's book, but I bought some ready mixed lavender sugar for pancake day and would like to use this in my recipe - otherwise it may never get used up.
Really I'm just wondering how to flavour the sponges with lavender/lemon. How much sugar should I replace with the lavender sugar? Do I need the rind from one large lemon or more??? The recipe I'm using suggests 125g of normal sugar. And finally, should I still put a little vanilla extract in?

Fab. looks like she used 100% lavender sugar and sifted the lavender pieces out. I might try 50/50 with the rind of a lemon and a tiny bit of vanilla to ensure that the flavour is subtle. Thanks for your help:beer:

I used fondant icing but i will use normal icing sugar next time. I also left the icing white and they looked fab with the lavender on the top (but i must admit i did take the lavender off the top when i ate the cake).0 -

Lavender is a herb, so yes you can eat it....however, I found it was lovely in the cake but i didn't like the decoration on the top (though i did try it) as it was just too much lavender in one go for me. I just removed the lavender on the top before i ate my cake....you decide yourself, you may like it.
Pls make sure you know that the lavender hasn't been sprayed with chemicals/ pesticides ie lavender from your own garden.0 -

hello, i have a glut of lavender in my garden, and have always fancied cooking with it, i have a recipe for lavender shortbread, but i would like to use this aromatic flower in other baking projects...so anyone have any ideas, im especially looking for as you guessed a cake recipe
