the best scrambled eggs i ever made were whilst on holiday with a friend in norfolk. i used local organic eggs, cream and butter. mixed the eggs with the cream and butter, cooked it in butter, as everyone has said, take them off the heat before you think they are done, then they were put on top of generously buttered thickly sliced toast, it really was not for the health concious but i have never cooked scrambled eggs like it again, the taste was amazing (hence my other posts about a poncho in a size 26, oh dear)

Not all milk at start (if at all) , I always do them in the nuke-er (microwave), but add water first and milk later as milk boils too quick. short bursts, and whisk each time, last time when just runny, shake out contents into a cooler bowl (not cold just warm eenuff) add butter and fork it...... oh I'm doing some now, made me hungry.

Does anyone have an old Reader's Digest cookery book with a recipe for Southern Scramble in it? I made this in 1981 for a school competition, and won. :p It's the best scrambled eggs ever. It has ham, tomatoes and I think onions in it. I can't remember rightly though, and my mum flung out the book years ago. I'd love to find it again.

I'm pretty sure this was the book. http://cgi.ebay.co.uk/COOKERY-YEAR-COOK-BOOK-READERS-DIGEST-500-IN-SEASON-REC_W0QQitemZ370186498100QQcmdZViewItem
