    If don't have yoghurt - use lemon juice;
    mix up 1 tsp each ground coriander, ground cumin, 1/tsp red chilli powder (or chopped green chillies), juice of 1 lemon, equal qty of veg. oil and about 3/4 - 1tsp salt (to taste). If have them can use fresh ginger and garlic (crushed or chopped into fine strips).
    chop chicken into cubes and marinate in above for couple of hours (longer the better). Can use chicken on bone too - just score pieces in several places to let marinade get right into meat. Cook in hot oven - about gas mark 6 until juices run clear when pierced with skewer. Eat with salad/rice or we like it with roasties and yorkshire puds! Any leftovers - chop into small pieces and use as sandwich filling or make wraps with tortillas
    Alternatively slice chicken into strips and marinade then cook (grill/oven or frying pan) along with some strips of pepper and onions and make fajitas!

    Gosh! You are all so expiremental. I on the other hand am so boring and predictable. If it's Monday it must be chicken casserole etc.
