Meatballs in tomato sauce always get our vote round here!
A great way of using mince. Also how about a special one for tuesday - pancake canelloni? Make yourself some medium sized pancakes - fairly thin ones work best. Make up a savoury mince mix as someone posted above, again you can hide any veg you want in there by grating it in during cooking. Spoon some mince onto each pancake and roll up - place each one as you fill it carefully into a dish. Once the dish is full / pancakes are all used pour cheese sauce over the top, srinkle over grated cheese and bake in the over until the top is golden and bubbling.
I'm afraid in the long term you're going to need to have a chat with your OH regarding his eating habits - as it sounds like he's in danger of passing his faddiness on to both your kids, and this won't do them any favours in the future. How about getting him more involved with the meal planning - it will also give you the opportunity to have a real chat about the value of getting the kids eating their five-a-day.
Good luck on your challenge - as others have said you should not have too many problems managing with that budget. I make meatloaf too, I use mince, sausagemeat & stuffing, add seasoning, I use tomato puree, garlic puree & pepper, mix it all together with an egg. I cook mine in a loaf tin, but have used a round casserole dish before now.

There's only 2 of us here most of the time, has anybody ever frozen the meatloaf?
I only have 2lb loaf tins so one of those would be w-a-y too much for us. I was thinking of making a full one and then cutting it into good size slices and freezing in 2 person portions into freezer bags.
Might experiment with this one next time DD and 'her gang' visit for tea
