can i freeze birthday cake with marzipan/fondant covering if no how long will it last

hi hoping someone can help me! Its my sons birthday next weekend and he wants me to make his cake - no isue here! Becasue of work etc i wouldnt have time to make it next week so would need to make on sunday - but his party isnt til the following saturday...how can /is it possible to keep the cake fresh for almost a week? I was going to use fondant icing but dont know if marzipan will last longer

    Marzipan is practically immortal;) I'm using some I bought last September for a simnel cake today. If you're making a traditional fruitcake with alcohol in it won't need freezing- just wrap it well and it will improve rather than deteriorate.

    Hmm a toughie this as you didnt say what the cake was going to be made of so I'm going to answer for both.If its a proper heavy fruit cake then it can be marzipanned and iced and kept in an airtight tin for many months.It used to be traditional to save the top tier of the wedding cake for the christening of the first child and I did this and served it twelve months later and it was perfectly fine so a week or so would be no problem

    As for a sponge its a different matter as they dry out very quickly and no you cant freeze and iced cake as they go soggy on defrosting but you can freeze an undecorated sponge or indeed you could freeze the sponge with a buttercream/jam filling and then decorate when nearer to the date.If it is indeed a sponge cake you intend to use I would advise that you decorate the cake whilst still frozen as they are easier to handle then.
