You could make stroganoff with some of the mushrooms, plus a veggie casserole/curry with some of the root veggies; I make a veg and bean bake with normal baked beans cooked with saut!ed veg (carrots, celery, leeks, peppers are all good) then top with breadcrumbs and oven bake til golden, which freezes well. Lol I think I'm going to make and veg and cheese bake tonight for the kids and I will make a start and have a jacket pot with PLENTY of salad. I feel the need for veg soup tomorrow for lunch.

Could you tell us exactly what there is?
I'd love all that fruit and veg. I'm with blueberrypie suggestion send it to me. Would last me about a week on my own
. I go through a lot of fruit and veg.
The big mushrooms could be stuffed with tomatoes, peppers, couscous etc. very nice.
Shepherds pie, vegetable chilli, vegetable curry, salads, sweet and sour vegetables, stir fried vegetables etc! So many choices :rotfl: .
All the fruit could be cut up and frozen. Smoothies are a great way of getting fruit into the diet.I am a vegan woman. My OH is a lovely omni guy0
