Need to use up veg before holiday

Hi all am going on Holiday Sat Morning and would like to use up the stuff we have in the fridge, I wondered if anyone had any creative ideas. I have
Celery - not fresh enough for salad
big bag of baby spinach
Mushrooms loads of
cabbage
cucumber
onions
Think thats it... hmm

Can you make some soup and freeze it?
Celery Soup would use up some onions as well.
Also Mushroom Soup - again would use some onions.
Baby Spinach - is it 'baby enough' to use as a salad with cucumber and onions? Or perhaps just freeze it - not exactly sure how you would freeze it, but I suspect it would be to 'open freeze' and then bag.
Cabbage should freeze fine as well.0 -
Onion and mushroom bhaji with a cucumber and yoghurt dressing? Followed by a Sag Aloo (or Spinach and potato curry)?
Have no idea what to do with the cabbage - sorry.

Thanks have printed off a celery soup recipe, have never made it before and have all ingredients at home. Looking for a mushroom soup recipe but they all have cream in and I want to freeze it so that wont work. Was thinking about making a curry etc buy had indian food last night so dont really want to have it again, some great ideas though thanksRecently married and loving it x0

There's an Able and Cole soup recipe. It does require cream - however I normally make the soup up, freeze it and add the cream when heating.

If you don't have a pound of artichokes - you could always reduce the potion number from serving 4 to serving 2.

i just freeze bags of spinach as they are.. you obviously cant use them for salad as they go soggy when defrosted, but you can break off a handful to throw into cooking.
the cabbage you could just cook it and eat it, slice it thinly and stir fry it with some onion and cucumber cut into strips, add some garlic, soy sauce a dash of vinegar and ketchup and you have an easy sweet and sour flavour sauce.. yummy!!0 -

Saute the stuff that can be sauteed, throw in a tin of toms, cook for a few mins, then add rest of stuff that will wilt quick, leave for couple mins, then take off heat and leave to cool. Portion into individual sizes and you have a good 'ratatouille' topping for baked pots, rice etc.0
