chinese red powder

hopefully this is the correct location for this post, if not, please move.

I went to Morrisons over the weekend and by ritual we buy some Chinese flavoured spare ribs, they're basically awesome.

Anyways, this weekend they had none, so asked the butcher bloke if they had any round back, but he said we can do it to whatever meat you chose, so it turns out it's this pinky powder that soaks into the meat.

Where can I buy this probably bad for me powder as I crave for it :D

    You might be able to buy it from a Chinese grocers, but it might be something that you'd need to get from a butcher's supplier. They sell all of the powders and marinades that butchers use, as well as sausage flavourings, rusk etc. If you've no luck buying the powder, then I'd definitely try googling 'butcher's suppliers', and they should be able to tell you where to get it.

    Both are Char Siu marinades, which are great for making ribs. They are even better when put on a slab of fatty belly pork (if you will excuse the saturated fats!). You should be able to pick up char siu (chah see-oo) marinade in any chinese cash and carry/supermarket.

    My rib sauce is

    1 cup ketchup
    1 cup brown sugar
    1/3 cup vinegar
    1/3 cup soy sauce

    Place in pan and bring to heat stir until sugar dissolves. I then pour over the prepared ribs and roast in the oven !! They are gorgeous.
