I've just tried out this recipe from a friend in Australia.;)

Impossible to make pie.
3 eggs
6 oz SR flour
4 kilos coconut
3 oz butter
3 cups of water.
Combine all the ingredients together and bake in a 6 inch greased pan on gas mark 1 for 4 hours. Now for the magic.....When the pie is cooked it will magically have created a botttom spongy layer topped with silky smooth coconut mousse with a delicious lemony tang. It has to be seen (and tasted) to be believed. :beer:
