Hi all, my mil was saying that you don't need to !!!!! sausage skins any more as it is not proper skin!!!!!! I thought you did it to get the fat out of it? she said it was so they did not burst!! So what do you do?

funny !!!!! is not allowed but pricking is!!Go hopefully into each new day, enjoy something from every day no matter how small, you never know when it will be your last0 -
i did see on a cooking a programme that pricking a sausage lets the flavour out, but as i only buy cheap sausages i see it as letting the fat out.0

If they're skinless sausages, then no need, obviously! But if they're 'proper' sausages then yes, pricking them will stop them bursting.

I remember seeing cooking programme featuring a guy who made his own sausages - he reckoned that people that have to !!!!! them to stop them bursting are trying to cook them too fast. I thought it was to stop them bursting which used to be a much commoner experience than it is now due to the higher content of rusk and fillers there used to be -especially during the war. That's why they're called bangers!0

I don't pierce the skin and have never had one burst - I like to keep all the juices and flavour in - I buy decent sausages from the butcher perhaps thats why I don't get bursting bangersPeople seem not to see that their opinion of the world is also a confession of character.
