Egg Mayo and Stir Fry Veg - separate questions!

Hi guys,
Am going to make up some egg mayo later for OH's sandwiches at work, just wondered how long prepared egg mayo keeps in the fridge for?
Also, have just bought a pack of stir fry veg from Asda, on offer for 50p and is part of meal plan for tonight
I know I will only need to use half the pack so thought I would freeze the rest for use another time, any idea if there is anything else it can be used for apart from stir fry?

I'd keep egg mayo for a couple of days. Maybe 3 days at a push, it never lasts that long in our house though, it is always eaten on day 1!
Don't know about the stir fry veg, other than a salad or stir fry?0
