Cooking livers and??

Hi there,

Does anyone have any ideas how to serve liver?
I normally fry them it a pan, but what do you serve with them? fries, green salad, mash potatoes?

My Mother use to let the pieces of liver soak in a bowl of milk for a while before frying, any idea what the purpose of this is or how long they need to be soaked for??

  • Soaking the liver in milk I think removes any bitter tastes. But I may be wrong, I'm sure someone will corrcet me on this.

    I think the idea of soaking in milk might have been to make the liver more tender but I never do it.

    I mix herbs into flour and coat the liver with that. I then fry it with bacon.

    My favourite meal is then to serve it with mashed potato and cabbage.

    I do sweet and sour liver and onions. 1lb liver, 2 medium onions, 1 can chopped tomatoes, 1 tablespoon demerara sugar, 2 tablespoons balsamic vinegar.

    Soften the onions in a little oil, brown the liver add all the ingredients and simmer on a low heat for about 20 minutes.

    Serve with boiled rice.

  • There's something in liver which REALLY agrees with me - I always feel good after a meal!

    I fry onions, then add chopped up liver and possibly a few mushrooms and some vegetable boullion. On a good day I might chuck in a half glass of red wine :p

    Serve with mashed potatoes and cauliflower or brocolli :T

    There's a recipe of mine on the Recipe Thread called Liver with Herbs which uses red wine and is the only way OH will eat it [still turns up his little snout mind!] other than as pate

  • Slice the liver about 5-8mm thick and coat in cornflour.

    Then quickly stir fry it leaving it pink and slightly bloody in the middle (so better make it lamb or ox liver, cook longer if pork).

    Serve with a baked potato and mushy peas.

    Meal for four for a couple of quid.

    I've always loved liver, even as a child! I have it dry fryed (as above) with bacon, jacket pots, onion rings and peas, yum!
    If I want to get my kids to eat it, I was it, slice thinly, put in a casserole dish, pour over a jar of pasta sauce, and put in the oven to cook slowly. The liver breaks down and looks like mince, serve over spaghetti and they think it's bolognese!! LOL!

    Were having Liver, onions & bacon for Dinner tonight. I just bung it all in the slow cooker with water & a bit of gravy granules. The gravy is wonderful, really thick and the liver sooo tender. Serve with mash & sprouts.
