Weddings abroad - arrangements & prices

Hi eveyone,
My fiance and I have been planning our wedding since last June and have had to put it back by another year as we've made so few concrete decisions!
We know we want to marry abroad and are focusing on Turkey, Italy and Greece (at the moment!) but we want to arrange the flights, accommodation and party ourselves and only pay for outside help with the legal paperwork and ceremony venue. We'll also need a photographer & some flowers but I figure we could arrnage these separately to avoid paying a premium rate.
Does anyone know of companies that will give you this minimal assistance without requiring you to buy a full wedding package and more so, do any of you have experience of trying to arrange everything yourselves and what tips can you offer to make this a smooth(er!) ride for us?
