Asparagus Quiche
Pastry: 1 cup flour and a pinch of salt
50g butter rubbed in
Cold water to mix
Filling: 2 cups grated cheese (I use 1 c parmesan when going very low fat)
Tin of Asparagus - drained
3 eggs
1 cup skimmed milk
1 tspn salt
1 tspn mustard
Line a flan tin with pastry. Sprinkle grated cheese over.Cover with asparagus. Blend rest of ingredients, pour over filling. Bake at 200c for 20 minutes - or until puffed up and slightly brown on the top.
You can substitute asparagus for mushrooms if you like. When I make the pastry I do it in the whizz, but if you're doing it by hand just add a little water at a time until it forms a ball - once I put it in the quiche dish I pop it into the fridge to let it rest while I get the other stuff ready.Total Debt: [STRIKE]26,709.49[/STRIKE] [STRIKE]£25,619,81[/STRIKE] [STRIKE]£21,596.92[/STRIKE] £1,626.14

sorry to be a pain, i know there is a thread somewhere for low fat recipes inc weight watchers and slimming world- could someone please kindly point me towards it as i can't find the bloomin thing!

I tried this one the other day and the whole family loved it - I think its going to be a regular. Do use the chunky mango chutney though. Enjoy!
