And yes, I know it's Mothering Sunday tomorrow - but by special request.......!!!!!!!!!

I've cooked off the Turkey Crown & a piece of smoked Gammon today in readiness.
After I boiled the Gammon I popped it in the oven for an hour & basted it frequently with a concoction of lemon juice, orange juice, honey & marmalade (guess what leftovers I had in my store cupboard!). It smells divine! Just cooling it down now.
However - I have left about half a pint of the basting juice. Was thinking of making a bit of chutney tomorrow morning to go with all the salady bits, using this juice as the base.
Onions & vinegar I have - plus celery maybe? An apple? Inspire me! :hello:
Don't want it too runny or I'd put in oranges.
