Does anyone know how long coconut ice keeps for? I want to make some for a school fundraising event. (son volunteered me!) Problem is, it's on my sons birthday. i won't have a lot of time and want to know how far i can make it in advance.

Because coconut ice is so sweet, then if you keep it in an airtight tin, I would imagine that it will keep for at least a couple of weeks.
The sweetness and high sugar levels mean that bacteria won't grow in it very well, so there's a low risk of food poisoning.0
