So I planned to make curry for the first time. The onion/ginger/garlic part is almost done, the tomatoes, turmeric and paprika are ready to go in, the veggies are steamed and I have leftover brisket...
Just checked the recipe and I don't have any garam masala!!!!! Can I still make curry???

When I make curry, I use onion, garlic, ginger then add tomatoes, cumin, corriander, turmeric and at the end garam masala if I have it. I don't find it makes a huge difference. Having said that, I always add the cumin and corriander and not paprika. I add chilli poweder depending on the heat I want. Sometimes I add cream or yoghurt near the end.
Having said all that, I am sure it will taste just fine with the ingredients you have, just maybe a little different to what it would be like with the garam masala. You can still make it.

Of course you can! It really isn't going to morph into macaroni cheese or something if you don't put garam masala in:rolleyes: There is no 'right' way to make a curry.0

'Course you can. You can chuck in ground coriander, cumin, or both instead, or just omit altogether if you haven't got any of it. Was it meant to be hot-ish ? A bit of chilli powder/flakes/fresh chillies if you have any, for heat, if not, lots of black pepper.0

Garam masala is a mix of the following spices.
Cumin, coriander, cardamom, black pepper, cinnamon, cloves and nutmeg.

Aww bless ya all. Actually, I don't even like my curries hot... But I wanted to impress my OH with this one! I've got cumin and coriander - I'll bung some of those in.

Garam Masala means "warm spice" and is mainly ground coriander and then ground cumin.The acquisition of wealth is no longer the driving force in my life.0
