March Seasonal Cookery

Right-oh have got my act together and have looked a couple of recipes for March out of an ancient cookery book I picked up at a jumble last month fr 20p! although not convinced by some of the "seasonal" elements it claims!!
Savoury Potato Pancakes
sv4-6
1.5lb grated potatoes
1 small grated onion
4oz flaked corned beef
2 rashers streaky bacon diced
S& P
1.5 level tbsp plain flour
3 beaten egg yolks [see apple puree pudding for using whites
oil
Take out excess moisture from pots. Mix pots, onion, beef & bacon. Season. Blend flour into egg yolks and add to pot mixture. Heat oil until hot and shape pot mixture into 6 3" wide cakes. Cook until golden brown turning once. Drain off excess oil
Apple Puree Pud
1pt sweetened apple puree
1 level tsp powdered gelatine
juice of 1 lemon
2 stiffly beaten egg whites
1/4 pt double cream [whipped]
1 level tbsp caster sugar
2 drops vanilla essence
dissolve gelatine in lemon juice, placed in cup over hot water. Stir it into apple puree & fold into egg whites. Pour this into moist 1.5pt mould and leave to set 2 hours[in fridge] Turn out and decorate with cream sweetened with sugar & vanilla/
They also suggest scotch eggs made with a herby crust and doing chicken & leek pie for St David's day.
