help with alternative to takeaway

my darling other half wants a pizza takeaway for tea but as our family cant afford it i said i could do one at home thats just as good. i have managed to make a pizza but im stuck on how to make the cheese and bacon stuffed potato skins. i really need some step by step instructions as i get confused really easy. i have some baking potatoes, cottage cheese and bacon bits. preferably using the oven or slow cooker.

    Potato skins are really nice but I am not sure that using cottage cheese will be that nice as it might go a bit soggy. I would bake the potatoes in the microwave until soft (or in the oven if you don't have a microwave) and then cut them in half and scoop out the middle. I would mix the scooped out potato, a bit of the cottage cheese, some grated cheddar or other hard cheese and the bacon bits and put it back in the skins. Sprinkle grated cheese over the top and put them back in the oven until they are crispy and golden brown. Yum!

  • I can't give complete step by step instructions, but generally for filled potato skins you just cook the potatoes in the oven as normal, take out and carefully scoop out the potato into a bowl, add to it whatever filling you want (eg cheese or bacon. i like some mustard with the cheese). Then scoop back into the skins and back into the oven to warm through when you want to eat them (can be made in advance).

    I would by baking as normal until outside is crispy and inside is soft, then cut potatoes in half, scoop out the filling and mix in a bowl with cottage cheese and (cooked) bacon bits. Put the filling back in the potato skins and top with grated cheese and pop under the grill.

  • easy to do!!

    get the spuds in the oven as if you are doing jackets.

    cook them til crispy outside soft inside.

    cook the bacon and once cooked cut up into little bits.

    mix bacon with cottage cheese.

    cut the potatos in half and scoop out most of the inside (keep for making mash or fishcakes)

    add topping and grill

    serve and enjoy the praise!

    i did this method on friday and it worked a treat!

    bake potatoes in oven for an hr
    cut in half and scoop out middle
    drop a teaspoon of butter in each half and bake for 15 mins
    mix toppings with potato
    bake for a further 15 mins with topping inside!

    YUMMY even better if you have some sour cream to dunk em in! x

  • Just to echo the above recipes, they're just as yummy as takeaway, if not more. And you can make sure they actually are loaded with toppings! Also really yummy with sweet potatoes as an alternative. :)

    Good luck! I'm sure you'll find that your own version is far better, if for no other reason than you can make it exactly the way you like it - and you get more!

    My lot all now prefer home made versions of pizza, curry and chinese - though that could poss be a reflection on our local takeaways, I like to think that our version is better!!!
