Creamy Vegetable Pie Recipe needed

I'm having guests round tomorrow, and I've got a mean Steak and Ale pie lined up for most of us, but my pesky Vegitarian girlfriend recons that cows arn't a vegetable, and so I'm looking for a recipie for a nice creamy vegetable pie for her.
I've bought some nice organic leeks, onions and carrots thismorning, which I'm hoping to throw in with a bit of broccoli or something, though if anyone has any suggestions, especially for the creamy sauce, I'd be very grateful!
Also, because this is only pie for one, will any extra I make freeze OK? I'll probably be freezing just the filling.

Make a veggie version of my Chicken and Broccoli bake
It's a doddle to do and can be made in advance then reheated. I have made it in the past with only vegetables in and it works just as well as the original version.
