you need to seal the beef on all sides in a very hot pan for a few minutes to ensure the juices stay in the beef when you roast it/them in the oven (I'm guessing you are using fillet? Should just be a quick cook on all sides) After that, leave it to rest - ie, just leave it on the work top for all the muscles to relax in it and the juices to go back into the meat. If there are juices running from it when you wrap it up in the pastry, then you could well get soggy pastry.

I think it means dry if off before putting the pastry on it. I also take any joint of meat out of the fridge for an hour before putting it into the oven this maybe is what's meant by resting before cooking.0

Bringing the meat out of the fridge is good as it brings it back to room temperature first.
Resting is after cooking - the muscles need to relax after cooking in the intense heat otherwise you get juices running from the meat as you carve and tougher meat. Cover in foil and leave for at least 10 minutes, 15 if possible.
Imagine if you sat for a second with your bum on a gas ring - the effect of the muscles clenching in the intense heat and then relaxing of them afterwards is the same effect as a piece of meat as it comes out of the oven"Stay Wonky":D

Thanks. I started resting the joints a couple of years ago on my Dad's advice & couldn't serve up now without having done so! I use the 20-30mins resting time to whack the oven up for the yorkshire puds & final blast of potatoes etc. Oh well back to the ironing ................ at least I can smell the yummy chicken currently cooking away lol!0
