Hi mar,
The Prospects website has some sound guidance on covering letters, what to include etc:
http://www.prospects.ac.uk/cms/ShowPage/Home_page/Applications__CVs_and_interviews/CVs_and_covering_letters/Covering_letters/p!ejFdaLl
It's graduate orientated (I work in a uni) but the principles still apply.

A covering letter should say what job you are applying for - why you think you are suited to the job, match your skills to what they are looking for. - why you want to work for that company eg: good work ethics, good chances of a career, fantastic training programme etc...
Example:
Dear sir/madam
I am writing to apply for the Bank Cashier/Customer Service vacancy recently seen advertised on the job centre website.
With 2 years experience working for Norwich Union and a year as a Customer Service Advisor with Barclays I think I would be well suited to the role. I have a good telephone manner and enjoy dealing with members of the public. I am able to work to deadlines and am very target driven.
I am looking for employment with your company - HSBC, as it is well established in the banking industry and is a household name. Your company offers a fantastic package for it's employees and I feel that you could offer me the career I am after with your in house training programmes.
I have attached my cv as requested and hope to hear from you soon,
Kind regards,
........Not really comping any more as too ill - but hoping to win £1000+ in 2017 in cash prizes - watch this space!0
