Sun dried tomatoes: How long will they keep?

Options
Brought a big bag of the things back from Pisa last week. Will they keep indefinately as they are in a plastic bag, or can I freeze them?

    If they are dried, then that is the sole purpose of drying them, to keep them, like prunes, sultanas, raisins, mushrooms etc

    No need to put in freezer, they will keep if kept dry, I would remove form plastic bag though as this may cause "sweating", try a clean glass jar

  • I have had sun dried tomatoes in the fridge for over a year and they are fine. They were open in the cupboard for a while too, with a clippy thing on the bag.

    I should eat more sundried tomatoes :o

    I have a similar question about pesto.

    If I made my own, how long would that keep in a sealed jar in the fridge?

    yes I have done exactly that - I also brought back a pack of the dried ones from a trip a year ago, and they sit in a big glass screwtop jar. They are still absolutely fine.
