Hi,
I often do this with chicken breasts or a piece of fish. Wrap in foil with sliced onions, garlic, peppers or whatever you fancy really.. if you want liquid I would suggest either lemon juice if using fish with some lovely herbs or sliced tomato with the chicken to keep it moist. Chicken takes about 25-30 mins just make sure its cooked through and not pink... 180 degrees. Fish slightly less time, works well with any white fish or salmon.
I usually serve with rice but you could do any carb or/and veg..

Is there a reason to do this rather than in a casserole with a lidI try not to use foil too much, as it can't be reused
Do be careful with acidic ingredients (such as vinegar or lemon juice) and foil - the acid reacts with the aluminium foil, which really isn't good for you to ingest

Hi
Jamie Oliver did some recipes like this. He put some cannelini beans in as well I think.
If you look on his website you'll find some recipes.
