if paid in cash, i would start looking for another job- thinking more and more owners are trying to dodge paying tax, among other things..Long time away from MSE, been dealing real life stuff..

I like your attitude and think its pretty altruistic to go to the trouble of going back and telling her why....(lets hope enough people do - and she has to change her mind about not paying NMW).
Lets face it - this excuse about not paying NMW "until you know the system" is a pretty feeble one. Just how long would it take an obviously intelligent person like yourself to learn how to operate a cash register - 5 minutes or 10? But she would obviously be prepared to "spin out" that excuse for as long as she possibly could.
