I made some chocolate muffins at the weekend - the recipe uses sunflower oil instead of fat.
190g plain flour, 150g sugar, 9 g baking soda, 2 tablespoons of cocoa, half tspn salt, egg, 80ml sunflower or veg oil, 80ml milk.
I had part of a bar of cooking chocolate which I crushed into chips, although not essential.
Preheat oven at 200 degrees.
Add all dry ingredients together and mix, add wet ingredients. Mix well and add chocolate. Mix and put into muffin papers in a tin.
Bake for 20-25 min. Thanks to MSE, I am mortgage free!

I use butter for baking ever since I ran out of Stork & the taste was sooo much better :T You could try the Twinks (homemade hobnobs) that are famous on here. They are also delicious & rarely last the day in this house. Or look at www.be-ro.co.uk for inspiration. They have everything from basic sponge sandwich cakes to gateau's & everything in between. Butter -churned cream from a cow
Margarine -
Vegetable Oils, Water, Salt [1.75%], Buttermilk, Emulsifiers: Mono- And Di-glycerides of fatty acids, Flavourings, Vitamin E, Citric Acid, Preservative (Potasium sorbate), Colour: Beta-Carotene, Vitamins A & D.
Btw don't be fooled by the vitamins in the marge. They add them to the marge so that it will have the similar nutritional profile as butter. They're already in the butter;)0 -
I don't touch margarine either as Thriftlady will testify - I am not a fan at all!!!! Only ever cook with butter.

My doctor used to refer to margerine as a 'Value Reduced' food. He reckoned they take perfectly healthy oils and treat them so that they give you heart problems. BTW the manufacturers were forced to start adding vitamins etc because children were becoming ill through eating margerine instead of butter!Eat food. Not too much. Mostly plants - Michael Pollan
