when I get in from work on Friday evening, but if I have to start it all from scratch on Friday eve, I won't eat until silly o'clock. What bits do you reckon I can make in advance? I was thinking of the white sauce, do you think it will freeze ok, if I make it tonight? Any ideas how far I can go with the veg? I think aubergine might go a bit funny if you chop it up and leave it in the fridge for the day :confused:

    Ive never made this but I often make meat lasagne and cook the whole lot in advance and freeze or you could make it all on Thursday night and leave it in the fridge. Realised that sounds a bit vague. What I mean is do everything up to the stage where you'd normally put it in the oven. Also, Asda does frozen aubergine slices which are one of Delia's cheats which I find really good.

    I have the fresh aubergine, so I'm going to be good in that sense! I just wasn't sure if the veg would go manky if I left it, mushy perhaps?! I'll have to give it a try and see!

    You could roast the veg and leave it in the fridge, I regularly make huge batches of roasted veg and keep them in the fridge for 2/3days.

    All in one white sauce only take five or so minutes made from scratch.

    Thank you! So, I'll roast the veg beforehand, it's probly easiest for me to do that tonight. Do you reckon it will keep in the fridge until Friday, or should I freeze it after roasting and get it out on Friday? If I make the white sauce, do you think that will freeze? I know this bit won't take ages, but quite frankly, I don't know if I can be bothered to do it Friday, unless I have to!

    It will be fine until Friday, I keep it 3/4 days with no problem, I think it might go a bit mushy if you freeze it.

    I dry fry aubergine slices and tray freeze them. I even make up moussaka using them still frozen, provided the meal is cooked through they are fine.
